I don’t know about you but regardless of the fact that I have a fantastic partner in crime that I celebrated Valentines Day with… February 14th this year meant that Pancake Day was just around the corner and it’s really crêped up on me!
As we tucked into our Waitrose Dinner for Two meal deal, (Which was delicious by the way and only £20 for a starter, main, side, desert and drink or chocolates?!) I was already planning my pancake day. This post is purely dedicated to yummy pancake recipes including a gluten-free pancake recipe… Read on to salivate!
Do you go for crepe? Scotch? American Buttermilk? Urgh, too much scrumminess to choose from! I’ve gone for the more traditional crepe style including a Gluten Free pancake option which has AMAZING reviews! In fact, a lot say they can’t taste the difference or that it in fact tastes better than recipes with gluten in! Praise be to the gluten free pancake!
One of the things I love most about making pancakes is that you essentially chuck everything in a bowl and whisk it up until you divvy the batter out into the pan to fry! Whichever of these fabulous four recipes you go for, they all use the same method so will fry up the same way! Well here’s tried and tested crepe recipes and cooking method all in one post for your ease!
3. BBC Good Food – Easy Pancakes
Checking into the leader board at number three is BBC Good Food’s Easy Pancakes. These really are easy-peasy lemon squeezy!
Ingredients:
100g plain flour
2 large eggs
1 tbsp of sunflower/vegetable oil (Plus a little for frying)
Pinch of salt
Serves: 12 pancakes
2. Delish.com – Easy Crêpe
Sweet-ching things up here with a recipe you can savour! These easy crêpes from Delish.com have sugar in the batter which isn’t typical for a classic crepe batter but for those of you with a sweeter tooth, this little naughty treat will tick all the boxes! (Plus, there’s nothing saying you can’t still smother them in Nutella as well?!)
Ingredients:
125g plain flour
2 large eggs
1 tbsp caster sugar
1/4 tsp salt
360ml milk
1 tbsp unsalted butter
Makes: 4 large pancakes
1. Delia Smith – Pancakes
My personal favourite which is batter than all the rest (sorry) is Delia Smiths pancake recipe which makes some truly scrumptious crepes. I’ve been making these ones for years and everybody loves them… They’re flipping delicious!
Ingredients:
110g/4oz plain sifted flour
2 large eggs
A pinch of salt
200ml/7fl oz of milk mixed with 75ml/3fl oz of water
50g/2oz unsalted butter
Makes: 12 small pancakes (quadruple it… more mixture, means more yumminess)

You’re gluten intolerant? You’re probably thinking “Oh crepe! No pancakes for me!” but wait! – This Gluten Free pancake recipe from BBC Good Food has some incredible write-ups. With a recipe this simple, I’m hoping it means less mess/washing up too! I haven’t personally tried this recipe out yet – However, I am going to give it a go this year after what fantastic reviews it’s had! Fancy joining me? Check out the ingredients below!
Ingredients:
125g Gluten-Free flour (Doves Farm has been recommended)
1 large egg
250ml milk
butter for frying
Makes: 6 small pancakes
What about the best toppings on your pancake?
Yes, of course you can just stick to lemon and sugar. Or, as in ther case of my childhood, spread them with ketchup. No, I have no idea why I did that either, but I did. Every damned year. ?
But your choices are so much wider now. In this house, banana & maple syrup reigns supreme, but here’s our list of top alternative pancake toppings for you to try this year:
- Banana and maple syrup – has to be top of the list. Add a drizzle of single cream to really spoil yourself.
- Fresh Blueberries – feels healthier, and much fresher. Simply scatter with blueberries and a shiver of icing sugar. (to be fair, any fresh sruit works, but we especially love the pop of blueberries).
- Fruit compote – anyone else remember halcyon childhood holiday car journeys, stopping at the Little Chef? The only thing that was worth it was the pancake. Simply add a bag of frozen fruit to a saucepan and heat for a whiel until it melts and congeals into a fruity mess. Add to pancake, plus cream or ice cream.
- bacon and maple syrup – Usually with the thicker American pancakes, but works well with crepes too. No I didn’t fancy it either, but don’t knock it til you try it.
- Nutella – Just spread, roll and eat. Add banana if you’re feeling really daring.
- Golden Syrup – because we’re actually all just 7 at heart.
- Biscoff spread – love the biscuits? Try the spread. Heaven.
- Peanut butter, chocolate and banana – it doesn’t need any help, but a topping of squirty cream never goes amiss…
What is Pancake Day?
Shrove Tuesday is the feast day before starting Lent which some people know as Ash Wednesday. This feast day was created to use up the eggs and fats before your 40 days of sacrifice and reflection in the lead up to Easter. The ingredients in a traditional English pancake are below and each symbolise four points of significance at this time of year…
Eggs – Creation
Flour – Staff of Life
Salt – Wholesomeness
Milk – Purity
Well, I think all this researching has made me peckish! Perhaps this is my cue to go off and perfect my crepes… Wouldn’t it just be awful if I had to eat all the practice ones?
